Eating Like a Caveman

These past couple of months, I've been trying something new and exciting. I stumbled across the Paleo diet while searching for healthy meal plans and found it to be a refreshing way to mix up the old food routine without forgoing too many of my favorites. Meat, fruit, veggies in. Grains, dairy, and legumes out. Of course there's more to it, but you get the idea. Being a hardcore "oatmeal for breakfast" girl, I had to figure out an alternative to my favorite grain. I starting centering my breakfasts around eggs and mixed it up from there. Since eggs have always been a weekend treat, it was fun to incorporate them into my daily routine with a side of fresh fruits and sometimes sliced smoked salmon. For those who once thought eggs took too long to cook, I found a quick method that takes about as long as my oatmeal prep. The amazing egg in a cup! Seriously, so good and fast!

My version of Eggs in a Cup:
- Lightly spray oil (olive or any nut oil) in a demitasse cup
- Break 2 eggs (or egg whites) in a cup
- Add a little bit of almond milk
- Sprinkle with black pepper and Italian seasoning
- Whisk eggs
- Microwave for about 1 min 40 secs (don't forget to put a paper towel on top!)
Voila! Perfect cup-shaped eggs with a fluffy yet creamy consistency.

I also find myself not as tempted to eat the bread at restaurants and making healthier choices when eating out like this Pecan-Crusted Rainbow Trout w/ sauteed spaghetti squash (it only looks like pasta), tiny green beans, and jumbo lump crab lemon butter from Canopy.
